There’s much to say about starting your day with breakfast tacos. Nutritious and delicious this to-go early morning Tex-Mex staple is an Austin area must-have. They’re convenient, easy to eat and are made-to-order to accommodate the pickiest of eaters. And did we mention that they are also inexpensive and overflow with flavorful combinations and toppings.
The foundation of any breakfast taco is its homemade warm tortilla that’s filled with scrambled eggs, bacon, potato, chorizo and beans. Plus, other fillings such as smoked brisket, green chilies, cheese, and fresh avocado. Tomatillo Salsa Verde, Pico de Gallo and a multitude of sauces ranging in heat from mild to spicy are traditional accompaniments. We’re sure once you sink your teeth into a breakfast taco you’ll never go back to the traditional eggs and sausage breakfast again. For a special morning treat during the week or on the weekend, below is a list of area taco emporiums that make the grade.
Flour or Corn for the Ultimate Breakfast Taco?
The choice is up to you but here’s our take on it. If you’re new to the concept of eating a taco for breakfast you may not know that it’s the tortilla that sets apart a good taco from a great one. They need to be warm, fresh, and homemade. Self-claimed taco purist opt for the corn variety. The warm corn flavor is intoxicating and is perfectly fitting for the fresh ingredients. Since the corn ones are thin, you’ll get two tortillas instead of one. When done right flour tortillas are warm, chewy and never crispy. Homemade tortillas whether corn or flour, far outweigh any store bought varieties. You’ll definitely know the difference.
